Recipes

Where is Sadie?? Can you find our little daschund in this picture? Hint: Look for the little brown nose. :-) What is so funny about this is that Mokie hates getting anywhere near Sadie. I think he thinks Sadie is too annoying and unpredictable. Now that Mokie is coming up on his 9th birthday I am wondering if he can see very well. He also seems a lot more cranky! GRRR! I find myself wanting to say, "Be nice kids" and then realize I am thinking of the dogs! LOL

I am adding some more recipes that I found. I have tried all of these and really enjoy them.

Tex-Mex Pasta Salad

1, 10-oz. package pasta, cooked, drained, and rinsed in cold water (I use spiral usually)
1, 14.5-oz. can black beans, rinsed and drained
1 cup frozen corn kernels, thawed
1 red bell pepper, seeded and chopped (I do not use this)
3 green onions, chopped (I don't always use this)
1 cup cubed cooked chicken
1 cup medium-spiced salsa
½ cup plain yogurt or low-fat sour cream
3 Tablespoons mayonnaise
2 teaspoons ground cumin
Salt and pepper to taste

1) Combine drained pasta, black beans, corn, pepper, green onions, and chicken, if used.
2) In a separate bowl, combine salsa, yogurt or sour cream, mayonnaise, cumin and salt and pepper.
3) Pour over pasta mixture and stir to blend.4) Refrigerate until ready to serve.

My Fettucini Alfredo

1 8-oz. package cream cheese
3/4 c. (or 3 oz.) Parmesan Cheese
1/2 c. butter/margarine
1/2 c. milk (you many need to add a bit more milk)
8 oz. fettucini cooked & drained

In large saucepan stir together cheeses, butter, and milk over low heat til smooth. Add cooked fettucini and stir. I add1 can of tuna & some peas. Other times I use chicken instead.

Sausage & BRUSSELSPROUTS Casserole


4 large potatos, scrubbed not peeled ( put in as many as will fit in the pan)
4 italian sausages (I use 1 package of polish sausage)
16- 20 brussel sprouts (I use 1 bag of frozen)
1 large onion
1 crushed garlic clove ( is use 2-4 or garlic powder)
2 T. butter
2 T. vegetable oil
1/2 t. dried oregano
2 t. paprika
1 c. Monterey Jack or Cheddar cheese
salt and pepper to taste (needs very little salt)

#1 Place butter & veg. oil in baking dish. Melt in 350 degree oven.
#2 Cut pot. into bitesize pieces. Finely chop onion.
#3 Toss pot. saus., onion, b. sprouts, garlic, oregano, paprika, and s/p in melted butter/oil. Bake covered for 15-20 minutes. Stir 2-3 times while baking. Bake uncovered additional 15-20 minutes. (Mine is never done this quick but it could be because I have a really old oven. I cook more like an hour and I turn up the heat to about 400)
#4 Remove from oven & toss w/ cheese. Return to oven for 5 minutes or until cheese is melted.

(I bake all this in a cake or casserole pan.)


Sour Cream Chicken Enchiladas

Flour tortillas
Chicken, cooked and cubed
1 pint Sour cream
1 can Cream of chicken soup
1 small can Chopped green chilies
1/2 to 1 c Onions, chopped
Monterey Jack cheese, shredded(at least 1c.)
Cheddar cheese, shredded

Mix chicken, sour cream, green chilies, onions, and some cheese together. Spray 9x13 pan with Pam and spread a tiny bit of sauce in the bottom of the pan first. Put about 1/4 cup mixture in each tortilla, roll up and put in pan. Pour remaining mixture on top of rolled tortillas and sprinkle some more shredded cheese over all. Cover and bake at 375 for about 25 minutes.(less rotell and make sure onions are cooked well)


Cabbage Roll Casserole

1 lb. Ground Chuck
1 medium Onion, chopped
1 t. Salt
1 t. Pepper
4 slice Bacon, chopped
3/4 c. Rice, uncooked
1 t. Worcestershire sauce
4 c. Cabbage, shredded
1 can Tomato soup
1 tomato soup can of Water
1 can Tomato sauce
1/2 tomato
Water1 T. Milk

Cook bacon until crisp in skillet. Add beef and onions. Cook until brown. Season with salt and pepper. Stir in rice, mix well. Spray Pam in a 9x13 pan. Spread meat mixture in dish. Cover evenly with cabbage. Mix remaining ingredients and pour all but 1 cup evenly over cabbage. Cover with foil and bake at 325 for 1 hour. Remove, pour the remaining 1 cup liquid over cabbage, cover loosely and bake 1 more hour or until cabbage is very tender. Cool to room temp., wrap and put in refrigerator or freezer. Best made ahead.
