Recipe-Easy Chopped Salad


Haven't tried this yet but it sounded good and good for you. If you try it before me let me know what you think. ~Kim

Easy Chopped Salad

Serves: 8

1 8-oz. package shredded carrots
2 T. olive oil
1 8-oz. package shredded coleslaw
2 T. Dijon-style mustard
1 8-oz. package shredded red cabbage
½ cup plain, nonfat yogurt
½ 12-oz. package broccoli slaw
½ cup light sour cream
3 T. fresh basil, chopped Salt and pepper, to taste
3 T. fresh parsley, chopped
Directions

In a large serving bowl, combine the vegetables, including the basil and parsley.
In a small bowl, whisk together the oil, mustard, yogurt, and sour cream. Pour over the vegetables; mix lightly.
Sprinkle with salt and pepper, to taste.

Serve the salad right away, if possible; cabbage tends to soak up the dressing.
